INSTANT DRY YEAST
Dry yeast is one of the miracles of modern baking—a free-flowing granular powder made from millions upon millions of dehydrated single-celled organisms. Once hydrated these enzymes break down sugar, producing the alcohol and carbon dioxide that give bread its distinctly fermented flavour and airy rise. Dry yeast has a longer shelf life than fresh yeast because it’s been dried out.
Instant yeast is another type of dry yeast. It is made using a similar process as active dry yeast, although it is dried more quickly and milled into finer particles. Because of this, it dissolves and activates faster. Unlike active dry yeast, instant yeast can be mixed straight into the dry ingredients with the same result.
DIRECTIONS FOR USE: Add to the dough during the first stage of mixing.
